Welcoming a more efficient kitchen
I started this to help me batch cook food, mainly for saving time during the weekdays so it's not just air-fried beige meals.
It's worth noting here that a 1/1 container will not fit in a standard UK single oven, the largest that will fit is a 2/3rd pan.
Understanding Gastronorm Sizes
2/3 GN Container
Dimensions: 354 × 325mm
Common Depths:
- 65mm: Perfect for sides, shallow casseroles (~4.2 L)
- 100mm: Ideal for stews, curries, main courses (~6.7 L)
- 150mm: Deep dishes, large batch cooking (~15.5 L)
Typically serves 12-18 portions depending on the dish
1/3 GN Container
Dimensions: 176 × 325mm
Common Depths:
- 65mm: Ideal for vegetables, sauces (~3.4 L)
- 100mm: Small batch items, specialty dishes (~5.1 L)
- 150mm: Larger batch meals, such as chilli (~7.7 L)
Typically serves 6-9 portions depending on the dish
All of my recipes are specifically portioned for these standard sizes, because I run a home kitchen and don't want lots of various sizes.
I currently have the following sizes:
1 x 2/3 GN 65mm, 2 x 1/3 GN 100mm, 2 x 1/3 GN 150mm
Recipes
Each recipe is carefully design to maximize freeze-ability, ease of making and fitting into standard deli containers or no. 2 foil containers.
Lasagna
Serves 12-15 portions. Can be made dairy free easily enough.
Base red sauce
A slow cooked base sauce that can be portioned and used to create various other recipes
Base white sauce
A simple white sauce that can be used to create various other recipes
